Kuzu Mochi

Kuzu Mochi is Jo-Namagashi, a traditional candy that is served in the summer.
They are eaten with Kuro Mitsu, a dark syrup and Kinako, roasted soybean flour.

Slightly chilled, it is served to green tea. On hot days, it is very refreshing. It’s a light, fat-free Wagashi that can be prepared quickly and easily.

There are different recipes depending on the region. While the classic recipe consists of kuzu, water and sugar. There are some, for example with additional wheat starch and flour.

The classic one is very soft due to its manufacture.

The Kuzu Mochi variant with starch and flour is more solid and therefore Mochi-like.
