Japanese Rice
Before I turn to individual rice varieties, I would like to deal specifically with Japanese rice (Oryza sativa japnica). Wagashi can only be produced from Japanese rice varieties.
Japanese rice is a round grain rice. It is more sticky after cooking than other rice varieties. For this reason, he has established in Japan. The sticky consistency allows you to eat it with chopsticks very well.
米 „kome“ means the uncooked rice.
ご 飯 „gohan“ or „meshi“ means cooked rice.
The word „Gohan“ means a whole meal in Japanese language.
粳米 „Uruchimai“ and も ち 米 „Mochigome„ are the main Japanese rice varieties.
