This wagashi are Higashi because of there low water content.
Rakugan are pressed, overthrown and dried in rakugan forms.
In the 18th-19th centurey wooden forms were used. Rakugan mold are a luxury and very expensive.
These days you can buy rakugan molds for affordable prices.
Cheap molds are produced from ceramics.
This molds can also be used form für cookies, spingles or biscuits.
