Since one of our main products for cooking wagashi is rice, I would like to start a article series about rice. First I will clarify the question: What is rice? For this I will present different varieties of rice.
What’s Rice?
Rices is among the one-year-old grass species, which must be replanted after each season.
The plant is about 50-160 cm high and carries a panicle in which up to 3000 grains can be enclosed.
A rice grain consists of seedlings, endosperm, silvery skin, and lemma. If the silver skins and lemma are removed, and the rice is polished, the end product is wild rice or natural rice.
